Will ThumbPress delete my existing thumbnails when I disable image sizes?

No. The Disable Thumbnails module only prevents new thumbnails from being generated on future uploads. Your existing files stay untouched unless you manually delete them. You can regenerate thumbnails based on the sizes you have picked.
