Multisite not working with a subdomain

Hello everyone,
I had created a WordPress network something like 15 years ago. But this prior experience seems of no use as I am stuck.
I have a main domain name (www.example.com) to which are linked two subdomains (test.example.com). My main domain has been running smoothly for a few years.
I have created the two new sites. Yet, I get an error 500 when I try to reach the subdomain urls.
I’ve extensively read on the topic but the more I read, the more confusing it gets as websites are telling everything and then the contrary. So let’s start from the start.
Do I need to reinstall WordPress for each subdomain? If not, how does the shared installation work when root folder are different? I have created folders at the root through FTP to which my subdomains are linked to. I thus have three folders (www, example1, example2).
Odd thing, the error 500 is gone if I add www before my subdomain name. I get my provider’s page saying the website hasn’t been installed. Yet, I’ve pointed as root folders different folders than www.
I’m very confused.
My questions may be vague to you guys but I really don’t get how the multisite works once you’ve created your sites. I haven’t found any relevant and reliable information about it. So I cannot debug the whole thing by identifying potential issues.
