Please make sure you are checked the Enable notification option at Manage Notification Settings Page before updating notification settings.
Check snap here.
If you want to customize client notification email open file appointment-calendar-shortcode.php, than search code line //email subject and body and edit notification text there.

Yes I have made sure that is ON. I also switched it on/off several times and it is still not getting the WPMAIL.

It’s very strange appointment makers are receiving emails fine but not admin. Then also check your spam folder.

I too am having a similar issue. While I’m not getting the “not available” message as Pablo, I too am not receiving email notifications when someone fills out the form.
I have two separate emails, one as the admin, the other I use to fill out the form as the “client.” Every time the client email account receives notification but not the admin email account.
I have tried everything mentioned above. Seems to be a glitch/bug of some sort.

Frank, I am 100% sure the email is not going to spam.
If the WPMAIL shows “not available”, then it has no way of knowing where to email it.
The sending to the users works since they enter their email addresses and just comes from “admin”
Is there a file I can edit to manually input the WPMAIL?

The ONLY thing I can think of is that maybe you do not have your email address associated with the admin settings?
Go to Settings ► General and look for Email. Make sure your email address is listed there.
Not sure if this would help or not, just a thought.

Yes, I have checked that and also changed it several time to see if it would make any difference, but it did not.
Can you give me detaile dinstructions on how to MANUALLY remove the plugin. I did it using the normal way, and reinstalled it and it seems to not remove totally since it remembered many of my settings. I want to uninstall but also make sure to manually remove any the files left over before I reinstall it.

In order to completely remove plugin go to Appointment Calendar→Remove Plugin page.
It will remove all the data associated with plugin.
Frank, I said that the way you say to remove it DOES NOT totally remove it. There must be some files remaining since when I reinstall it, it remembers many of my settings which are not the original default settings.
Well I uninstalled and still have the “not available” in the WPMAIL area.
Any other ideas? I really like this plugin and wish to purchase.
