By default Polylang doesn’t provide this feature, you need most of the time create a wpml-config.xml.
This file works for some themes and doesn’t work for others.
Take a look at the end of this thread, it explains how to find the option name of your theme and the names of each options.

Well thanks that worked great, I now have 2 different headers, one per language. Super!
