Inconsistent emails with CF7

Thank you for your plugin and your awesome support. The issue I am having is that some of my Contact Form 7 messages have not been sending but others do work fine, despite that all of them say “Sent” in the Email log. I am using SMTP mail.grocerygazelle.com:465
In trying to figure out the issue, I saw that the Connectivity Test results say “Warning: connected to hostgator.com instead of grocerygazelle.com”. In another thread where someone had this warning using Gmail API instead of SMTP, you suggested they contact their hosting provider so I did this. They said my email is “sending from the (myusername)@gator4086.hostgator.com” and if I want to change that “The email script would have to be modified so it sends from an email hosted on your account”, which can’t be done on CPanel, but instead “whereever you configure your mailer”. Perhaps this isn’t the fix at all so I wanted to check with you as you are extremely knowledgable about your plugin and this sort of thing.
I can provide Diagnostic Test results or portions of the Session Transcript of a message that didn’t go through if it would help. Thanks in advance for your input on this issue.
