 * Is it possible to generate a timestamp when the form is submitted and feed that
   into Sheets?
 * I see that CF7 supports a date and time mail tag to be entered into the Mail 
   Body. Any ideas on how to utilize those to feed into my sheet?
 * I am using a Child Theme, and can make changes there – so if it requires code
   changes that works!

    Date and time goes into the 
   excel sheet by default… Please clarify & explain the issue with screenshot if
   possible,
