Currently you cannot. I will look into changing where the category is assigned so this can happen.
You can now override the user category via subject line or shortcode as of Postie 1.7.8. Owners of the AddOn will receive an update.

I have emailed twice and not gotten a response.
Sent on Sep 8 and Sept 9. I will send again. Check your spam folder? Might be blocked since it is a executable file.
