thanks for your question, and sorry for the trouble.
The problem here actually is a bug in the DataTables JS library’s horizontal scrolling. Normally, your tables should cover the full screen.
To make that work again, please uncheck the “Use DataTables” checkbox on the “Edit” screens of these tables. Then, use the scroll mode of the TablePress Extension from https://tablepress.org/extensions/responsive-tables/ to get the horizontal scrolling back.

done, but we have the same issue
by the way on the wp-admin I don’t see the new shortcode
[table id=1 responsive=scroll /]
but I see this
[table id=1 /]
the plugin is activated.

all this has only to be changed on the “Edit” screen of your page, not in TablePress.
In addition, please uncheck the “Use DataTables” checkbox as mentioned above.
