changing pods gravity forms dropdown default text

Hi, we would like to change the default –select a {$taxonomy->labels->singular_name} — which is inserted by default to dropdowns into something else (another language). Any advice on how to go about that? obviously changing the code will last until the next plugin update so that’s no good (and a bad practice..) i was thinking going the ‘add_filter’ way to override the load_taxonomy_choices function in my functions.php but afaik there is no hook to work with.
