Sorry to hear that you are having problems with the Block Editor in WordPress 5.8.
Unfortunately, I’m not aware of easy ways to use TablePress with ClassicPress. That message that you are seeing there probably is because ClassicPress uses a different versioning scheme — which makes sense as they are modifying functionality.
At this time, I don’t have plans to develop a dedicated version of TablePress for ClassicPress, I just don’t have the time and ressources. Sorry for not having better news here.

ClassicPress retains full compatibility with the WordPress 4.9 branch, and the $wp_version variable is reported accordingly.
Are you able to restore support for WordPress 4.9 in TablePress? If so, then no extra work will be necessary on your end, it is certainly not necessary to develop a dedicated version of the plugin.

Unfortunately, going back to supporting WordPress 4.9 in TablePress is not something that I’m considering. Not only would this prevent TablePress from using modern WordPress features and functions, but it would also prevent me from using modern PHP programming functions (as WordPress 4.9 still supports PHP 5.2.4). This would be a large increase in maintenance and testing work, that I’m not able to fulfill.
If the block editor is not desired, as for @andrewleonard’s site, maybe using the Classic Editor and Classic Widgets plugins for a modern version of WordPress would an alternative:
