 * Default Date/Time offset is to set the default expiration date to be used when
   creating a new post of this type.

 * Is there any setting for that the expiration date is an offset to the publication
   date of a post, even if the publication date changes?
 * eg. always 1 week after the publication date.
 * And if the publication date is changed manually, that the expiration date will
   automatically change as well?

 * The default date/time offset is for new post creation and it will be automatically
   adjusted based on the time that you set.
 * If the post date is changed manually, the expiration date will need to be modified
   manually.
