 * I understand the switch remembers the user’s preference for future visits, but
   I would like the switch to initially be set to ex. VAT rather than inc. VAT, 
   is this possible?

 * Yers, this is possible. The plugin uses the WooCommerce settings. So you can 
   set it via: WooCommerce > Settings > Tax > Tax options and then choose ‘Show 
   prices in the shop: excluding tax’.
 * The plugin should take this setting as the base, and initially show the prices
   ex VAT.
