How could we stop Flamingo from tracking user’s IP address?

FYI:
That is not required by GDRP. You may not collect gender, sex orientation etc.
But Ip-address is not included in that requirement.

No, you can’t: in Italy for istance is mandatory from several years to anonymize the IP address even on Google Analytics.
