 * Is there a way to edit the checkout fields using this plugin?
    A year ago it 
   wasn’t supported, was this functionality added or not yet?
 * Is there a programmatic way to edit it or is it not supported?

 * No, you cannot edit the checkout fields using the WooCommerce Blocks plugin. 
   If you are referring to creating cart and checkout pages using WooCommerce Blocks
