NB. The variation used to print previously. However, the last two WooCommerce updates have updated the database so there may be changes the current form does not take into consideration.

We have double tested this on our side and have not faced this issue.
However, we are looking into this why the email is not showing the variation for you and will resolve this in our next update.
For the time being, you can override the email template and fix the variation issue.
I will keep you posted regarding the same.
I have updated to the latest version 3.1.3 which was released today. There is still information missing in the email. Since this post has been closed I will open a new post to continue the fault.
