Events Manager Basic Use

I am interested in using Events Manager for our figure skating club website. I’m not having any installation or usage issues, yet, knock on wood, installation went well and I feel like everything is working okay. Mainly I am looking for information on how to use it to create and manage events. I have looked at the getting started documentation, demo site and the forums. They all seem to focus on adding to the plugin or troubleshooting. I need to know more about what categories are used for, what information I need to have available to successfully use the plugin. Information I will need to get from the figure skating club boar members, coaches etc. If anyone can point me in the right direction it will be greatly appreciated.
