 * Can I exclude blocks or parts of the page from the translation? I didn’t find
   this option.

 * Hi, the option to exclude pages is located in the plugin’s WP settings.
    Also,
   to exclude blocks and parts, try to use Glossary or use No-Translate tags that

   don’t really need the automatic translations.

 * Unfortunately, no. ConveyThis uses machine translations as a backbone of our 
   translation technology for websites. If you need a pure human translation/editing
   framework, then you should consult other plugins for that matter.
