Field value not being received

I setup a form and all was working well. I added an extra field which was required one, and although this field is seen on the website page and requires the user to enter a value, this value is not being returned to the admin email.

All the other fields in the form come back with value but that one. I have deleted it, and re-entered another one, I have changed it’s position but nothing seems to work.

Any suggestions?

As a hint, the first form was created using the default one, just the labels were altered. Perhaps it is the way I am setting up the field? But Why would it work perfectly on the site and not bring the entered value back?
