 * is there a way to hide Fields yet for certain categories or products like remove
   shipping and billing in virtual products?

 * As I understand, you would like to hide fields on the checkout block for certain
   categories or products, is this correct?
 * Kindly note that this is not yet an option and the extensibility/modification
   of cart & checkout blocks are still being developed, which you can read more 
   about [here](https://woocommerce.com/document/cart-checkout-blocks-support-status/#section-8).
 * You are able to submit a feature request for the WooCommerce Blocks plugin [here](https://woocommerce.com/feature-requests/woocommerce-gutenberg-products-block/).
