To hide a particular product, navigate to WP Admin > Products > All Products > and click on the product that you want to hide. Then, on the Edit product page, set the Catalog visibility to Hidden.

I found the button your screen shot showed, but it deleted it off the homepage. I want it to display on the homepage but not in the shop page.

From the discussion above I understand that you do not wish to hide the product altogether, but just from the shop page instead.
That would, however, require using an additional plugin such as the one discussed here (https://woosuite.com/woocommerce/hide-product-from-shop-page/), or the Products Visibility By User Roles plugin.
