 * I want to change the style and color of the Image Caption Text and don’t know
   where to start. There’s nothing in my stylesheet with the name “caption” other
   than wp-calender caption. Help is appreciated!

 * your theme is set up for the styling but its not defined in your stylesheet.
 * add this line to your stylesheet
    `#content p.wp-caption-text { }`
 * and add your caption styling within the brackets
