That behaviour is normal. When you enable the “Auto-post by default” feature that you’re talking about, it will automatically publish newly created WordPress posts to GMB.
Once a GMB post has been succesfully created for the post in question, the Auto-post checkbox will automatically turn itself off (otherwise it would create a duplicate post on GMB each time you save/update the WP post).
If you want to automatically recycle the same posts on GMB, you might want to consider upgrading to the Pro version. It has an automatic re-post feature that will let you automatically recycle existing posts based on a schedule.

Thanks. For the premium version, it seems only option is for posts to be re-published weekly. How does this work – is is based on the post publication date? And what if I change that (eg. using a WordPress ‘republish’ plugin)?
The post recycling feature can be combined with the post scheduling feature. You can configure a post to repost daily (at most) and then using the scheduler you can configure at what time the post should be published.
