I am wondering if anyone knows why the layout of the installed plugin might be different. I have two almost identical sites and the members plugin shows differently in each user profile section.

On the first site, you have multiple user roles enabled. On the second site, you have it disabled.

You can change this from Settings > Members Settings in the admin.
