Is there a way to change the default complexity levels from (Easy, Standard, Hard) to something else?

Do you mean you want to change to the words used?
If so, I’d take a look at something like this plugin:
https://ww.wp.xz.cn/plugins/say-what/
which allows you to ‘translate’ text strings like this; ie, from ‘Easy’ to ‘Super Easy’, for example. 🙂
