Lightspeed Update Overwrites Woocommerce

We’re building a website with ecommerce functionality and integrating Lightspeed retail using the woocommerce/lightspeed plugin.
There’s a lot additional information we want to add to each product that’s not in lightspeed, but lightspeed’s update and midnight sync functions override woocommerce products. We’ve tried the suggested filter/action hooks and it didn’t work. And we tried building custom pages with product element but there’s major limit, ex. all the links of products in the cart or featured/sale products link directly to the product pages, and not the custom pages’ pages, creating inconsistent shopping experience.
Has anyone had success customize the update functionality of Lightspeed or block the override feature?
