Sorry that you ran into issues here!
You can’t just “add a listing into a category” as the Place Ad screen is not context-sensitive. It does expect that you select a category first.
With that said, it might be helpful to see what you’re seeing. Can you show me a screenshot of the “crammed dropdown”? Does it look exactly like our demo here? http://awpcp.com/demo or is it different?
If it’s the same, I’m not sure if there’s CSS available to fix that, but I can check with my developers. If it’s different, then there absolutely is a solution, and maybe a link to your site would help us find it.

It does look like the demo one, but at this size, it’s hard to find what is Wanted and what is Available.
The best option I have, is if the Main categories above each section of subcategories were in bold with some suggested CSS. May you please ask the but your developers about that?

There is two drop downs which makes it super clear now.
1st drop down is categories, second is Sub.
