With Blocksy theme the Hamburger menu that displays on Tablet and Mobile is exactly what I want to see on the the Desktop. I note that “Target” is the widget that is used for Tablet/Mobile – but for Desktop I have to use Menu01. Currently Menu01 displays all my pages in a line rather than as a drop down. I have played with the settings but no luck. I would be grateful for any advise please. Thank you.

The hamburger desktop menu is reserved for our Premium package, which you can find out more about here — https://creativethemes.com/blocksy/premium/. It is not possible to insert something like this in the free version.
