 * There is no mobile theme, it’s responsive.
    Maybe you have a plugin such as jetpack
   with it’s mobile theme enabled.

 * Mobile menu is a menu, not a theme.
 * Yes, the menu will changed to a mobile menu which you view it in a mobile device.
   It changes according to the viewport size.
 * This is how all responsive themes are designed, no way to change that.
