As I can see, the plugin is not activated on your site, so I can’t check how the admin-ajax.php works. After checking your site performance, I can confirm it seems the site is loading really slow, even if I click to products or to “Add to card” button. You can check how the infinite scroll is working on the products listing page, it is really slow.
The shop on your site uses WooCommerce, and the cart fragmentation is enabled, and it seems this is the issue (check the attached screenshot from GTMetrix).

I can confirm the admin-ajax.php is not slow because of GDPR plugin, its slow because of your server and theme configuration.
