Can you post what shortcode you are using?
In general, Document Gallery will display all compatible attachments for the post or page that you add the shortcode to. You need to delete or unlink the attachments in order for them to stop appearing in the gallery.
That said, addressing your second question, you can include specific attachment IDs, which would be necessary in order to have multiple galleries on one page (the way that you would achieve the text between the documents). The IDs attribute is described on the Installation tab.

I had the docs originally linked on the page and then when I got this plugin I used [dg].
Using Ids does filter the list though. So thanks. Problem solved.

I see that files get attached to the parent page. Can you delete the attachment without deleting the file out of the media library?? I can’t see a way to unattach the doc in library.
You can, but that is only possible with the ids parameter.
