I would very much like to know this also!
Well, support for this plugin seems pretty non-existent. The plugin registers EVERYTHING an admin does (edit a post, delete a photo, delete another photo, etc.) and certain functions other plugins do (email log automatically deletes certain records and those get added to the history). So this plugin actually includes TOO MUCH info for my purposes.
And support has not replied about at the least omitting the admin from the results.
Yes, there is a filter called simple_history/log/do_log' that you can use to exclude specific users by role, username, email, and so on from being logged.
