widget settings and Limit to Category

Right, I understand how to use the “Limit to Category” option. But that only let’s me choose which categories I want to INCLUDE. Instead, I want the ability to EXCLUDE based on category.
For example: “show all posts EXCEPT for posts in the “Foo” category“
widget settings, Limit to Taxonomy and
category=-1
1 – category id

OK, so I have a question then:
So the - (minus) symbol will EXCLUDE posts within that category?

Works perfect. Thanks! Ended up using it to omit posts with a certain tag:
post_tag=-141
