Strange problem. Is the taxonomy a custom taxonomy or a WooCommerce product taxonomy?
Also, can you share with us an example URL for the page or links to screenshots that show the problem? That will help us investigate.

Thanks for getting back to us. The %%parent_title%% snippet variable is only designed to work with pages, not taxonomy terms, so the fact that it’s displaying on in the Yoast snippet preview is a bug.
To get the intended result, you would have to manually add the parent term’s title for it to appear in the SEO tag. We’re sorry about that.
That said, there is an existing bug report to make this variable work as you intended on taxonomy term pages, but it hasn’t been implemented. You can follow the progress and add any information to the issue here: https://github.com/Yoast/wordpress-seo/issues/12211.
