You can use the WooCommerce Deposits extension, which allows your customers to put down a deposit or use a payment plan for products you specify. Payment Plans give customers the option to pay an upfront fee and the remainder at a later date, dividing payments into multiple parts over time.
The extension integrates with Stripe, so you can accept installment payments directly from your customers. You can find more information about using Payment Plans with WooCommerce Deposits in the following documentation:

I don’t really want to use another plugin – pay deposits doesn’t really make sense for what I need. I just want to use stripe and on the checkout page have the option for payment installments. Do I need to set this up on the stripe backend? And then how would I integrate it with the wordpress checkout?

You can look at using Stripe’s “Buy now, pay later” option, however, the only way to add this option is by using the following plugins, alongside Stripe:
