in order for the images to be optimized again they should have been restored first. Now that you removed the backup that’s not possible anymore 🙁
As for the possible issue with height/width: I just made a test but I couldn’t reproduce the issue noted by you.
Please note that the resizing only applies to the original image and the resizing is done while keeping the original proportions.
Anyway, if you feel there is indeed a problem I would greatly appreciate if you could contact us directly (https://shortpixel.com/contact) and send us an example so we can further investigate this.

Okay, just one more question, for any future attempts:
So in order for images to get optimised again, I would need to restore the original images by manually moving them from ‘wp-content/uploads/ShortpixelBackups’ folder back to where they originally were? Or is there some other way of retrieving them back into the optimisation system?
Well, the way described by you is one of them but it isn’t the one I would advise.
If you change the viewing to list mode in your Media Library then you’ll see there is a Restore option besides each image. That would be a way of doing things though it would involve some labor that won’t scale well with many images.
Another approach is (if you use our latest plugin version) to bulk re-optimize all the images as lossless. While this won’t bring back your images in their original format it can easily/efortlessly optimize your images as lossless which should make them look like the originals while keeping them smaller.
