 * Does this plugin logs track if someone downloads customer or order data?
 * We have lots of developers on the website and we want to make sure our customers
   data are safe.

 * Where and how is the customer and order data stored? It sounds like you may have
   some kind of custom made download functionality, and if so the plugin will not
   by default log that.
 * Using the [Logging API](https://simple-history.com/docs/logging-api/) however
   you can log anything to the log.
