I have been trying to figure this out for ages, how is this page created? http://demo.unyson.io/?fw-portfolio-category=portfolio

Is it a custom made page or a setting I’m just not seeing?

I saw about the single post and how to add portfolio items but not the display post for all the portfolio items?

This is not a page, but a taxonomy, you can create them from **Portfolio -> Categories**.
Please refer image.
