 * Regarding the posts that appear in category: where do I go to set posts up so
   that only 5-6 lines show when a visitor clicks on a particular post, and the 
   visitor will need to click on title (or something?) to view entire post? Also,
   how do I do this?

 * You need to edit the template that is handling your category page to use the_excerpt
   instead of the_content
 * [Template_Hierarchy](http://codex.wordpress.org/Template_Hierarchy) outlines 
   which template files handle what. Depending on your theme, it will vary
