Trying to upgrade from version 5.5.1 to version 5.8.0 with the prescribed procedure I received a time out error. After many tests I discovered that this was happening because I had changed the prefix at the database of the website.
When I turned the prefix to default wp_ everything went well.

Please correct this issue in your next upgrade!

It is recommended to define a WordPress SQL Table Prefix containing less than 20 characters to avoid any potential issue, as mentioned here:

My prefix had 3 latin characters.
I just mentioned it to see if there is a problem with the prefix check.

Otherwise everything is fine!

I’m not sure that is the root cause of the issue. Have you tried to upload the WooCommerce core plugin folder via FTP? There’s a guide here: https://www.wpbeginner.com/beginners-guide/how-to-manually-update-wordpress-plugins-via-ftp/.

Before doing any changes you should always ensure that you have a backup of your site in case anything goes wrong. More info at Backing up WordPress content.
