Thanks for reaching out to WooCommerce support. I have looked at the following products and see that there is a bit of a mismatch in the “INFORMAZIONI AGGIUNTIVE” sections of the products that show differently. Please see the linked screenshot for what I am referring to here:

I recommend checking the display settings for these areas in each product and ensure the settings match. Also, be sure that each variable product is configured the same way to prevent differences like this. More information about customizing this part of the software can be found in our documentation:

Thank you for replying. I have done more testing and see that the issue is simply the difference in those varying elements within the product attributes of the ‘INFORMAZIONI AGGIUNTIVE’ tab and how that information is configured for the various products. The only other thing I would as is if the options that display in the cart are product-specific or global? And are the options that DO NOT display the opposite?
If you would simply like to hide this from the cart, you should be able to add the following CSS to the Customizer (Aspetto → Personalizza → CSS aggiuntivo):
dl.variation {
display: none;
}
