    Have you been looked at Jigoshop checkout field manager? this plugin gives you a full control of your checkout fields, you can find it here

    Great.

    When purchasing products I would like to add optional extras, or different sizes? Can the Field Manager do this?

    I.e. we are selling flowers and the standard bunch might be £30, or they can upgrade to a large bunch for +£10

    Currently we can’t seem to do this?

    For that purpose you have to set a variations for products which are sold with different sizes, colors and etc. how to set product variations you can find
    here
