If you were using the default AddThis configuration, it’s using what we call “Preferred Services”. These are different for each individual, based on their past sharing history and what services are most popular in our service. This is designed to make it easy for users to share to their preferred service and to increase sharing.
If you’d rather specify which services are displayed, so that each visitor on your site would see the same set of sharing buttons, you can select the “Advanced API button configuration” option within the plugin settings:

Once you select that option, paste in the following code, which should show the Facebook, Twitter, Google+, Email, and AddThis “+” (More) buttons:

I just read the subject line again and noticed that you were referring to the Sharing Sidebar buttons. We don’t currently have a way to modify the services that appear within the Sharing Sidebar if your plugin is set to WordPress mode.
If you wanted to change the services that appear within this tool, you’d need to change the plugin to AddThis.com Dashboard mode, which is available under the Advanced Options within the plugin settings:

Once you make this change, you would make your changes on the AddThis.com Dashboard site, rather than within the WordPress interface.

Within the AddThis.com Dashboard, you would enable the Sharing Sidebar tool, where you’d find an option to change from “Auto Personalization” to “Select Your Own”.
You should then see a drag and drop interface that would allow you to specify which services should appear on your site:
