I hope you are doing good today.
I’m afraid this is not possible as all emails are controlled by UI in Forminator. The only additional thing there is that you can use HTML tags there.
When it comes to JSON files via email, I asked our Forminator Team if there is something we can check. We will post an update here as soon as more information is available.

You will have to use the $custom_form to check form_id if needed and remove entries from the $data array.
