serious technical issues assistance please

Hi,

please check the screen share. When I try change the Taxonomy custom label its not changing the filters name showing on my product category page? Also, my products are Aliexpress imported so when the filters are opened far too many sizes/colours etc are displaying. How do I adjust whats displaying when the filters are opened to make it user friendly?
