"Server Error" because of plugin

Trying to resolve a “server error” caused by a plugin installation by following these instructions on resetting my plugins folder via FTP

…but I can’t figure out a simple way to change the folder name. How do I do this, or is there a better way of resolving this plugin/server error issue?
