If I change any of the Domain Options under Domain Mapping configuration and hit save, the page reloads, but the settings remain the same.

Try the development version. If that does not fix the issue, try deactivating all of your plugins on the main site.

That seems to work. I notified the client, and if it works on their side I’ll mark this resolved.
