 * Is it possible to use shortcode with parameters instead of fixing things in the
   shortcode generator ?
   For example, I would like to speciify which CPT to use 
   inside the shortcode (and not in the UI shortcode generator).

 * I can understand your approach but unfortunately, there is no way to do that.
   If you use the shortcode version you must generate the shortcode by shortcode
   builder.
 * There are another two versions (Elementor and Gutenberg) of the post grid plugin
   for making any kind of block. If you need you can use those versions for your
   block.
