I took a look at both links you sent over and I’m able to see the products that are out of stock as well as products that are in stock. I went to the link you sent ( [https://fertes.pl/kategoria-produktu/do-kapieli/zele-pod-prysznic/](https://fertes.pl/kategoria-produktu/do-kapieli/zele-pod-prysznic/)) and I was able to sort by ‘out of stock’ and ‘in stock’ separately as expected behavior. I then chose a category of “For Bath” which worked as expected, and then I sorted by “out of stock” (via availability section), and “in stock” and the sorting is working as expected. Was there something different you were doing on your end that had a different result?
