 * I’m looking for a very specific function for a countdown timer (I actually need
   it to count up).
 * I’m looking for a counter that can count from 1-7 (1 per day), but skips the 
   weekend. It’s for our restaurant. We offer a 7 day menu cycle, but we’re closed
   on weekends. We want to offer online ordering, so we need a way to let visitors
   know what Kitchen Day it is.

 * Not really, no.
    But it sounds like you don’t need a timer, so much as day-based
   content. This could be done in a much simpler way, without the use of a countdown
   timer.
 * First, investigate some [Timed Content](https://wordpress.org/plugins/search.php?q=timed+content)
   plugins out there, and see if these meet your specific needs. If not, you can
   build this quite easily with a very little bit of PHP knowledge.
