 * I am trying to use the top command in SSH to figure out which WordPress plugin
   is crashing my site, but I don’t know what I am looking at!
 * – How much %CPU should php-cgi be using without any plugins?
 * – How do I tell what plugin is causing the problem? What number/line should I
   be watching?

 * That won’t work, you’ll just see the php process.
 * What you need to do is deactivate all of your plugins and reactivate them one
   at a time until the error (in your case crash) happens.
